Green soup?


Just made zucchini soup, tried a tiny sample, and am proud to say its delicious!  So easy to make:
-chop up some zucchini and summer squash.  I used 6 here so that I could freeze some for meals on the go.
-add to a pot and then add chicken broth.  Again, I used extra, about 4 cups.  Bring to a boil, allowing the squash to soften.
-meanwhile, chop up 3+ leeks, some garlic, and scallions.  Melt about 2tbsp of butter, or use olive oil, and brown the leeks, garlic, and scallions.
-once the squash has cooled a bit, puree all of it, as well as half of the week mixture.
